Since snow has basically eluded us, I decided this month we'd make our own snowballs -
cookies that is!
These are super easy and make such a cute cookie for January.
My youngest daughter helped me, and chopped the pecans. Unfortunately, we didn't have as much as the recipe said we needed, and substituted craisins (dried cranberries) to make two cups of 'pecans'. The cookies are even better with the sweet tarty dried fruit added in.
After we mixed up the dough, we shaped it into small balls.
Once they were baked, the cookies needed rolled in 10X sugar twice: the first time while still warm from the oven, and the second when cooled.
Almost all turned out well. However, it probably wouldn't be a cookie baking experience with a few mishaps...
Thankfully, not a full fledged disaster, and these were still edible.
Next month, I'm thinking of possibly making chocolate meringue Kisses, but am still deciding what kind to make in March. Any suggestions?
