My favorite muffins are pumpkin muffins.
I could eat these year-round,
but generally only make them in the fall
when the weather starts to cool
and the pumpkins start to ripen.
Unfortunately, I do not know who to credit for this recipe.
I have used it for years,
and have always been grateful to whomever devised the recipe.
Maybe you will enjoy them just as much!
Pumpkin Muffins
Ingredients -
2 cup flour
1 cup brown sugar
2 tsp baking powder
2 tsp pumpkin pie spice
1/4 tsp baking soda
1/4 tsp salt
1 large egg
1 cup milk (use less if using fresh pumpkin that is not strained well)
1/4 cup butter
3/4 cup pumpkin (if using fresh, strain well, or adjust milk amount accordingly)
Method -
1. Preheat oven 350 degrees.
2. Grease muffin pan.
3. Mix all dry ingredients together.
4. In a separate bowl, mix egg. Stir in milk, butter, and pumpkin until well blended.
5. Add dry ingredients, and mix well.
6. Spoon into muffin cups.
7. Bake for 25 minutes.
Recipe makes one dozen muffins.
